I've played a few PzC games where some of the units had the word/letters Coy in the description.

What exactly does Coy stand for?

I believe that it's the short form for company.

Yes, "Co" is short for company, in US terminology. However "Coy" is short for company in British / Commonwealth terminology. "Cie" is company abbreviation in French units, Kp is company abbreviation in German units, and so on.
