At the start of most battles I order everybody to hide as I finish the setup. I was wondering if that actually slows down my attack. Do the units go from hide to moving without delay or is there increase in the delay because they were in hiding at the start of the battle?

No delay, but it does dramatically decrease their ability to spot. If you are going to hide units, it's usually best to keep some unhidden so they can spot anything the other guy left in LOS.
