Damn, I´ve trying to put your hints together, but after all my answers do not make sense.

Cook islands was at first a pure guess, I thought it would fit well with that catering thing...

I thought Tristan da Cunha was a smart answer since Tristan seems to be a major catering company and the era when the man with this name found the islands was roughly the same as of Cooks.

Now thinking these new clues make me confused. First I thought of Cayman islands, if mr. Cook would have been starving he might have thought eating this creature related to crocodile. But Cayman islands were found by Sir Francis Drake in 16th century so he was not a contemporary of Cook (btw why are these islands called Cayman islands? IMO Gayman islands would be a lot catchier name :P) ....then I thought of Virgin islands, but I hope this explorer of yours was neither a cannibal nor a virgin. In addition Virgin islands seem to be under direct British/US administration.
