Dont defend a position that has open fields behind (if you have choice). Such a position can be a good defensive terrain but it would be a killing field if you need to withdraw to a new position.

Another good tactic is deploying support weapons like tank, infantry gun, machinegun to positions and angles that can deliver covering fire for retreating troops.

But as Jeff said, many times you just have to run for cover. Although disadvantaged, demoralized units can run much faster. It would be wise to demoralize pinned units if you have quality leaders that can rally them in the new position.
