P.S. A Panzer/Modern Campaigns player I'm not used to this level of fighting but I think I can still put up a good fight.

Go ahead and pick one. As for optional rules, take your pick but I would not recommend using variable ending as that can effect the balance and I don't think the scenarios were ever tested with it on.
