Situation:

Fairly open desert scenario.

I have larger number of tanks, but inferior quality.

Meeting on open ground seems a mistake. Do I find what little hiding places there might be and wait for the heavy armor?

Bascially yeah. Make sure you mass your forces and use any speed advantage you have to nip in and destroy segments of the enemy. Tough situation tho.

It depends how outranged you are..Superior numbers of tanks usually means that you need to outmanuoevre your opponent, standing and trading blow for blow only works if you have superior range and firepower. Running and hiding doesn't really achieve much either as your opponent will know exactly where you are. If you have reinforcements arriving then it is probably best to trade space for time.

Use smoke if you have it..I am a massive fan of those early war British CS tanks A10's and A11's that have direct fire smoke capacity. These are pure gold you can fire smoke ahead of your other tanks up to their max range. and move your other tanks behind it. IMHO there should be more tanks like this in the game..Also useful on defense when trying to screen a retreat.

Otherwise Use your numbers, attack from all sides force OP fire to spin them around and go for side or rear shots, then surround assault..
